Cross-country mountain biking (XCO) is considered an Olympic sport characterized by intermittent, cyclical efforts and high physical demands, leading to physiological, mechanical, and biochemical responses across a cross-country terrain while overcoming various obstacles. Objective: To determine the effects of different training methods—HIIT, SIT, LIT, and Combined—on physiological, biochemical, and mechanical variables in mountain bikers based on available scientific evidence. Method: This systematic review followed the parameters of the Cochrane Handbook. Documents were selected using PRISMA in databases such as PubMed, Scopus, Web of Science, the Cochrane Library, and grey literature, based on eligibility criteria and the PICOS equation. Methodological quality of the selected studies was assessed using the PEDro scale and the Cochrane Handbook. Results: Fifteen documents meeting the eligibility criteria were selected, of which 4 were randomized controlled trials (RCTs) and 11 were non-repetitive studies (NRSs). 53.3% of the studies showed an interest in analyzing the three physiological, mechanical, and biochemical variables. The total sample size for the systematic review (SR) was 302 individuals (250 men and 52 women). Conclusions: The polarized program is the most efficient, capable of inducing simultaneous improvements in aerobic and anaerobic parameters. Methodological limitations and heterogeneity in the training protocols were identified.
